Warm Potato Salad

Warm potato salad made with baking potatoes, bacon, celery, red bell pepper, and green onions. Potato salad is tossed in a light mayonnaise, ranch dressing, and served warm.

Ingredients -
4 medium Idaho Potatoes, peeled, cubed, boiled until tender, drained
pinch Salt
8 Bacon Slices, cooked until crisp, crumbled.
1-1/2 cup Light Mayonnaise
1 package Dry Ranch Dressing Mix
1/2 cup chopped Red Bell Pepper
1 bunch Green Onions, finely sliced
1/2 cup chopped Celery
 
Preparation:

1. In a large serving bowl, whisk together mayonnaise, ranch dressing mix and milk.

2. Stir in bell pepper, green onions, and celery.

3. Fold in potatoes and bacon.

4. Chill until ready to serve.

5. Serve warm or cold.

 



Potato Salad Tips -
Dry Ranch Dressing Mix

Blend 1/2 cup dry buttermilk, 1 teaspoon dried dill weed, 1 teaspoon onion powder, 1 tablespoon crushed dried parsley, 1 teaspoon dried onion flakes, 1/2 teaspoon garlic powder, 1/2 teaspoon salt, and 1/4 teaspoon fresh ground black pepper in a blender, at high speed until smooth.


Potato Salad Tips -
Red Bell Pepper

For variety you could use another color of bell pepper here, or a combination of yellow, orange, red or green. Raw bell pepper is loaded with vitamin A, vitamin C, and other nutrients.
