Potato and Feta Cheese Salad

Nice, easy potato salad, perfect for any day or night of the week. Boiled potatoes are combined with crumbled feta cheese, hard cooked eggs, fresh chopped cilantro, crushed garlic, fresh lemon juice and seasoned with salt and pepper.
Ingredients -
 
8 medium Potatoes, boiled and peeled, cut in bite size pieces
1½ cups crumbled Feta Cheese
4 Hard-Boiled Eggs, chopped
4 tablespoons finely chopped Fresh Cilantro
2 cloves Garlic, crushed
4 tablespoons Fresh Lemon Juice
5 tablespoons Extra Virgin Olive Oil
Sea Salt, to taste
Fresh Ground Black Pepper to taste
¼ cup pitted Green Olives, sliced in half
 
Preparation:
 

1. In a large serving bowl, combine, potatoes, feta cheese, hard-boiled eggs, cilantro, garlic, lemon juice, and olive oil

2. Season with salt and pepper.

3. Toss gently to mix.

4. Garnish with olives.

5. Serve immediately or refrigerate.

Cooking Tip

Feta Cheese
Feta cheese that crumbles easily. Found in many Greek dishes its very popular and very tasty. You could substitute another cheese that crumbles and blends well for the Feta to create new potato salad flavors.

Green Olives
Substitute black olives for the green olives, if necessary. You could also garnish with finely diced green onions or chives.
