Old fashioned potato salad is the traditional family favorite found at restaurants and picnics around the world. Cubed potatoes cooked until tender are combined with hard-boiled eggs, celery, and onion. Potato
salad is tossed with a mayonnaise/mustard dressing.
Ingredients -
1 cup Mayonnaise
1 teaspoon Dry Mustard
1/4 teaspoon Fresh Ground Black Pepper
4 cups Potatoes, cooked, cubed
4 Hard-Boiled Eggs, chopped
1 cup Celery, chopped
1/4 cup Onion, chopped
Preparation:
1. In a large serving bowl, combine mayonnaise, dry mustard, and fresh ground black pepper.
2. Add potatoes, hard-boiled eggs, celery, and onion. Gently mix to coat.
3. Refrigerate until chilled.

Place 4 eggs in a large saucepan. Add enough water so eggs are sitting 1 inch below surface. Boil over high heat. As soon as eggs begin to boil, remove from heat. Cover saucepan and allow
eggs to stand 17 minutes. Plunge eggs in ice water immediately. Remove after 5-10 minutes.

For best results use eggs that have been in the refrigerator a week or ten days. They peel easier.
