Mediterranean Potato Salad

New potatoes, sliced red onion, and diced black olives, dressed in fresh lime juice,and Italian dressing. Potato salad is topped with Greek style feta cheese and seasoned with salt and pepper.
Ingredients -
 
2 pounds unpeeled New Potatoes, scrubbed, quartered, boiled until tender
1 teaspoon Fresh Lemon Juice
½ cup Italian Salad Dressing
½ cup thinly sliced Red Onion
½ cup diced Black Olives
1 (8 ounces) package crumbled Feta Cheese
Fresh Ground Black Pepper, to taste
 
Preparation:
 

1. Combine lemon juice and dressing until blended in a small bowl.

2. In a large serving bowl, toss potatoes, onion and olives.

3. Pour dressing over potatoes and salad.

4. Sprinkle crumbled feta cheese on top of potatoes and season with pepper.

5. Refrigerate until ready to serve.
