Latin Potato Salad

Small red potatoes, green bell pepper, spanish onion, alcaparrado, and cilantro tossed with an extra virgin olive oil based dressing. Latin potato salad is seasoned with salt and pepper and garnished with green onions.

Ingredients -
2 pounds Small Red Potatoes, boiled, drained, cooled and cut in half
1 small Green Bell Pepper, seeded and finely chopped
1/2 medium Spanish Onion, halved and thinly sliced
1/2 cup pitted Alcaparrado, coarsely chopped
2 chopped Cilantro Leaves
6 tablespoons Extra Virgin Olive Oil
1/4 cup White Wine Vinegar
2 tablespoons Brine from Alcaparrado
1/4 teaspoon Salt
1/4 teaspoon Black Pepper
 
Preparation:

1. In a large serving bowl mix red potatoes with green pepper, onion, alcaparrado and cilantro.

2. In a small bowl, whisk extra virgin olive oil, white wine vinegar, brine and pepper.

3. Toss with potato salad mixture.

4. Chill until ready to serve.

5. Garnish with green onions prior to serving.

Spanish Onion

Spanish onions are sweet in flavor and well worth seeking out for use in this recipe. A good substitute would be a bermuda onion, a red onion, or any yellow onion.

Alcaparrado

Alcaparrado is a mixture of capers, olives and pimientos. A good substitute for the alcaparrado would be sliced green olives with pimientos.

Alcaparrado Brine

Substitute green olive juice for the alcaparrado brine, if you do not have available or cannot find.
