Great American Potato Salad

Great American potato salad mixes potatoes, hard-cooked eggs, celery, onion, pickle relish with a mayonnaise, mustard, celery salt, salt and pepper dressing. Small recipe easily doubled.

Ingredients -
1/2 cup Real Mayonnaise
2 tablespoons Prepared Mustard
1/2 teaspoon Celery Seed
1/4 teaspoon Salt
1/8 teaspoon Pepper
4 cups cubed Potatoes, cooked until tender
2 Hard-Boiled Eggs, chopped
1/2 cup chopped Onion
1/2 cup chopped Celery
1/2 cup Dill Pickle Relish
 
Preparation:

1. Combine mayonnaise, mustard, celery seed, salt and pepper in a small bowl.

2. In a large serving bowl add potatoes, eggs, onion, celery, and pickle relish.

3. Spoon dressing over potato salad mixture. Mix gently.

4. Cover and chill several hours before serving.

Boiled Potatoes

Cover potatoes with salted water in a large saucepan. Bring to a boil over medium high heat. Boil potatoes 12-15 minutes, until tender.

Red Onion

Red onions with their purplish red color and sweeter, less pungent flavor than white or yellow onions would be a good choice for this recipe.
