Dijon Potato salad is quartered red potatoes, radishes, and green onions in a mayonnaise, mustard, dill, salt, and pepper dressing. Tangy potato salad perfect as a side to a chicken breast entree.
Ingredients -
1 cup Real Mayonnaise
2 tablespoons Dijon Mustard
2 tablespoons chopped Fresh Dill
1 teaspoon Salt
1/4 teaspoon Pepper
1/2 pound Small Red Potatoes, cooked and quartered
1 cup sliced Radishes
1/2 cup chopped Green Onions
Preparation:
1. Combine mayonnaise, mustard, dill, salt, and pepper.
2. Fold in potatoes, radishes and green onions.
3. Cover and chill.

Radishes give up their purplish red color very easy when mixed with liquids. Wash the radishes very well before using them in this recipe. Consider holding them out until just before serving
and then folding them in.
