Classic Potato Salad

Classic potato salad consists of potatoes, celery, onion, and hard-boiled eggs, in a mayonnaise based dressing. This is a great recipe as it is, and a great recipe to add leftovers from the refrigerator to enhance and make better.

Ingredients -
1 cup Real Mayonnaise
2 tablespoons Vinegar
1 1/2 teaspoons Salt
1 teaspoon Sugar
1/4 teaspoon Pepper
4 cups cooked, cubed, and peeled Potatoes, (5 to 6 medium)
1 cup Celery
1/2 cup chopped Onion
2 Hard-Boiled Eggs, chopped
 
Preparation:

1. Combine mayonnaise, vinegar, salt, sugar, pepper, potatoes, celery, onion, and hard-boiled eggs.

2. Cover and refrigerate.

 



Potato Salad Tips -
Chicken, Turkey, Ham or Bacon

Finely chopped poultry or pork make a nice addition to this recipe.

Potatoes come in waxy, medium waxy and floury types. These designations indicate the level of starch from low to high. The lower the starch content the more likely the potato is to hold its shape after cooking.
