Chinese Potato Salad

Chinese potato salad is made from tender boiled potatoes combined with red bell pepper, green onions and fresh cilantro. Potato salad is tossed in a peanut oil, rice vinegar, soy sauce, sesame oil, garlic, cayenne and white pepper dressing.

Ingredients -
1 and 1/3 pounds (4 medium) Potatoes, cut into 1-inch pieces
Salt
1 Red Bell Pepper, finely chopped
1/2 cup thinly sliced Green Onions
2 tablespoons chopped Fresh Cilantro

Dressing:
1/3 cup Peanut Oil
3 tablespoons Rice Vinegar
1 tablespoons Soy Sauce
1 teaspoon Sesame Oil
1/2 teaspoon finely chopped Fresh Garlic
1/4 teaspoon Cayenne Pepper
1/8 to 1/4 teaspoon White Pepper

 
Preparation:

1. Add potatoes and 2 teaspoons of salt to stockpot. Add enough water to cover potatoes.

2. Bring to a boil.

3. Reduce heat, cover stockpot, and boil 12-15 minutes until potatoes are tender.

4. Drain potatoes well.

5. Combine peanut oil, rice vinegar, soy sauce, sesame oil, garlic, cayenne pepper, and white pepper to blender. Blend until well combined.

6. In large bowl, combine potatoes, bell pepper, green onions and cilantro.

7. Add dressing. Toss to coat.

8. Cover and refrigerate until ready to serve.

Sesame oil, made from toasted sesame seeds adds rich flavor and color to any recipe. Sesame oil is found in recipes throughout southeast Asia. Sesame oil is used sparingly as a flavor enhancer. You can find sesame oil in your local supermarket in the condiment section or with other Asian food products.


Potato Salad Tips -
Boiling Potatoes

Potatoes are done cooking when a paring knife slips easily into the potato. An unpeeled potato will take a little longer to boil than a peeled potato. Slicing or dicing the potato will also shave cooking time.
