Cheesy Potato Salad

Simple potato salad recipe. Red potatoes mixed with green onions, bacon, cheese, and tossed with sour cream, mayonnaise, and sugar.
Ingredients -
 
2 1/2 pounds Red Potatoes, cubed
1 cup Sour Cream
1/2 cup Mayonnaise
1/4 cup Sugar
1/2 bunch Green Onions, chopped
1 cup shredded Sharp Cheddar Cheese
1 slice cooked bacon, crumbled
 
Preparation:
 

1. Scrub red potatoes.

2. Place potatoes into a stockpot. Fill with enough water to cover potatoes.

3. Bring to a boil. Boil 10 minutes or until you can pierce easily with a steak knife.

4. Drain potatoes. Allow cooling.

5. In medium mixing bowl, combine sour cream, mayonnaise, and sugar.

6. Fold in half the onions, half the cheese.

7. Gently fold in the potatoes.

8. Top with remaining onions and cheese.

9. Sprinkle with crumbled bacon.

Cooking Tip

Cheddar Cheese
The cheese makes this recipe. Sharp cheddar is recommended, but a mild medium or extra sharp will work as well. You could substitute Colby, Monterey Jack, Queso Fresco for the cheddar.
