Carnival potato salad is a quick and easy potato salad recipe combining potatoes, pimiento, dill pickle, onion mixed with mayonnaise, salt, and paprika.
Ingredients -
3 cups cooked Potatoes, warm, cubed
1/4 cup chopped Pimiento
1/4 cup Dill Pickle, chopped
1 small Onion, chopped
1/4 cup Mayonnaise
1/2 teaspoon Salt
1/2 teaspoon Paprika
Preparation:
1. Combine potatoes, pimiento, pickle, and onion.
2. Toss with mayonnaise, salt, and paprika.

Boiling Potatoes
Add potatoes to large saucepan. Fill saucepan with enough water to cover potatoes. Add a pinch of salt. Bring to a boil over high heat. Reduce heat to medium, continue boiling until potatoes
are tender enough that a fork or knife pierces the skin easily. 15-20 minutes.
Potato Salad Tips -
Peeling Potatoes
You may or may not want to remove the skin for your potato salad. If you decide to remove the skin a vegetable peeler or paring knife will do the job nicely. It is not recommended to peel potatoes well in advance of using as the flesh will turn brown.
Place peeled potatoes in cold water to avoid browning of the flesh immediately after peeling.
