Caribbean sweet potato salad is sweet potatoes, corn and onion tossed with lime juice, mustard, brown sugar, garlic, ginger and olive oil.
Ingredients -
2 large Sweet Potatoes, cut in chunks and boiled
1 can Corn Kernels, well drained
1/4 cup Red Onion, coarsely chopped
1/4 fresh squeezed Lime Juice
2 teaspoons Prepared Mustard, preferably Dijon
3 tablespoons Brown Sugar
1 clove Garlic
1/2 teaspoon Grated Ginger
1/4 cup Olive Oil
Salt and Pepper, to taste
1 cup Cucumber pieces, pealed and 1/2 inch diced
1/2 cup coarsely chopped Peanuts
Preparation:
1. Add corn and onion to sweet potatoes.
2. Mix lime juice, mustard, brown sugar, garlic, ginger, and olive oil.
3. Toss potatoes, corn, and onions with dressing.
4. Salt and pepper to taste.
5. Add cucumbers and peanuts just prior to serving.

Boil or Steam Sweet Potatoes
Cube sweet potatoes into ¾ inch pieces, leaving skin attached. Boil or steam 10 to 15 minutes, until tender. Peel the skin from boiled potatoes.
