Cajun Potato Salad

Cajun potato salad is white potatoes and hard-boiled eggs, in a creole dressing. Creole seasoning, pepper, sugar, celery, parsley, and green onions mixed with potatoes and hard-boiled eggs.

Ingredients -
8 medium White Potatoes
1 teaspoon Creole Seasoning
1/2 teaspoon Black Pepper
1 tablespoon Sugar
7 Hard-Boiled Eggs
1 cup Celery, chopped
1 tablespoon Parsley, chopped
1 tablespoon Green Onion, chopped
1 small jar Sweet Pickle Relish
2 tablespoons Yellow Mustard
1 cup Miracle Whip
 
Preparation:

1. Boil potatoes, skins on. Drain, peel, and cut potatoes into ½” cubes.

2. Mash potatoes roughly with fork.

3. Peel boiled eggs.

4. Separate yolks from whites. Mash whites. Add to potatoes.

5. Mash yolks with mustard and relish.

6. Add Creole seasoning, pepper, sugar, celery, parsley, and green onions.

7. Fold in yolk mix.

Creole Seasoning

Combine 2 tablespoons onion powder, 2 tablespoons dried oregano leaves, 2 tablespoons garlic powder, 2 tablespoons dried sweet basil, 1 tablespoon dried thyme leaves, 1 tablespoon black pepper, 1 tablespoon white pepper, 1 tablespoon cayenne pepper, 1 tablespoon celery seed, 5 tablespoons sweet paprika in a food processor. Pulse until well-blended.

There are dozens of potato varieties available for purchase. If you substitute one variety of potato for another note that the texture and starch content can differ greatly between varieties and this can greatly alter the outcome of the dish.
